If you're going to be in Dubai from 13 to 18 October 2012, don't miss the chance to sample Pierre Gagnaire's superb French cuisine. This three-Michelin-starred chef presents sensational gastronomic creations that appeal to the senses. The restaurant, Reflets par Pierre Gagnaire, at the InterContinental Dubai Festival City Hotel, Festival City, Dubai, is a feast for the eyes as well, with its plush pink damask chairs, Murano glass chandeliers, and walls adorned with mother of pearl. A few menu examples give you an idea of Gagnaire's style of cuisine. An entrée is titled 'Hommage aux huitres de France,' consisting of a large Gillardeau spécial n° 1 poached in front of you in goose fat, red radish leaf soup and julienne of San Daniele ham; a Tatskaya n° 2 'au naturelle', with Wasabi and fresh palm heart, mélissa and frozen banana; Fines de Claire n° 5 Cadoret cooked in traditional butter Nantais, and endives perfumed with Thaï grapefruit.
Moving on to the mains, an example is La côte de boeuf Wagyu, comprising a large Wagyu beef rib cooked on charcoal, sliced and served with Bordelaise sauce and home-made béarnaise; with pomme boulangère, eggplant cannelloni stuffed with braised oxtail; bone marrow toast, chestnut and white celery.
Finally, we can recommend Le Grand Dessert de Pierre Gagnaire, seven desserts inspired by French pastry, based on season fruits, low sugar confectionery and chocolate.
