This January and February Richard Sawyer, executive sous chef in charge Hugo's restaurant at the Hyatt Regency Hong Kong Hotel has created a few simple dishes for diners to savour the exceptional tastes of the black winter truffles from France. Commonly called “The Diamond of Perigord”, these black diamonds are the most desirable truffles in the country for their distinctive and fancy taste which can complement any dish. Its harvest season usually starts from December until March in the Provence Region of Southern France.
Chef Richard presents Boston lobster with black truffle salad and ratte potatoes, where the freshly steamed live Boston lobster is complemented by light salad of French ratte potatoes and micro herbs, topped with the fresh black truffle and truffle dressing. It is a relatively light course though, the complexity in flavours is impressive.
Indulge in the enchanting taste from the Taittinger champagne risotto with pan-fried scallops. Chef Richard brings you a creamy, aromatic champagne risotto with sweet Japanese scallops, sided with shavings of black truffles, where the nice combination of flavours simply leaves your taste buds tickled.
Alternatively, you may pick the pasta cepes mushroom and pumpkin lasagna with black truffle. Truffles always work well with eggs and pasta, while Chef Richard has added poached duck eggs and cepes mushroom cream sauce to make the dish perfectly delivered.
Snail, bacon and black truffle pithivier with morel cream sauce shall never disappoint you. This classic French style puff pastry pie is made with snails, bacon and black truffles which add a truly delightful aroma to the dish, yummy!
Diners are also welcome to add on black truffles for any desired dishes in Hugo’s menu at a reasonable price per gram.
