Tribute to pasta at VUN restaurant in Milan
Ristorante VUN, restaurant at Park Hyatt Milan, led by chef Andrea Aprea, is presenting four culinary events, ideal for gourmets and all those interested in good food. Each evening will feature a great, award-winning chef, for a unique exploration of taste and creativity. The first appointment, on 22 November 2011, features Pino Lavarra from the Ristorante Rossellinis at Palazzo Sasso, Ravello. Pino Lavarra is one of the most important chefs in the Naples region, and he specializes in classic, creative Neapolitan cuisine. He won his second Michelin star in 2004 and has retained it since.
There is even a prize for diners who attend all the four evenings at VUN: they will receive a special gourmet dinner free of charge.
The menu for 22 November 2011 was designed by Pino Lavarra in cooperation with Andrea Aprea. It features:
Antipasto by Andrea Aprea
Egg, Potato, "Bagoss" and black truffle
First course by Andrea Aprea
Ravioli, Genoese-style braised octopus, broccoli from Bari, black olives, and anchovy zabaglione
First course by Pino Lavarra
"Paccheri Gerardo di Nola" (pasta strips), with lamb, mushrooms, red onion fondue, chevre cream and pomegranate
Second course by Pino Lavarra
John Dory fish fried briefly in flour with Senise peppers, Christmas broccoli, potatoes flavoured with oyster, and milk and squid sauce
Dessert by pastry chef Galileo Reposo, assistant to Andrea Aprea
Dessert with vanilla, dates and orange

Ristorante VUN is ideally positioned, very close to Galleria Vittorio Emanuele, in the centre of Milan.
Its autumn menu, by chef Andrea Aprea, features seafood such as European lobster, scallops and sea-bass, and other ingredients such as duck, mushrooms, herbs and cauliflower. The restaurant features Aprea's "signature dishes" such as "My garden," "Spaghetti, cheese, black pepper, mushrooms, onion" and others. The "Centre North South" tasting menu comprises five courses, providing an introduction to Italian cuisine from various regions.
