Sayad at Emirates Palace: new Chef

The celebrated award-winning Sayad fine dining restaurant at Emirates Palace welcomes new Chef de Cuisine Shaun Anthony. Shaun has an illustrious career spanning 12 years' work in some of the most highly regarded restaurants in Europe. With 3 Michelin star training and the ambition to ensure Sayad Restaurant retains its place as one of the world's best fine dining restaurants, we can expect even more from this signature restaurant at Emirates Palace.
Shaun joins Emirates Palace from Singapore. Originally from Canada, he describes his new role at Emirates Palace as an exciting time: “with the opportunity to build on such success and the enthusiastic support from the team, there are no limits to take Sayad to the world,” he explains. His passion is fish, and his aim is to bring global contemporary seafood to Sayad. He describes his success as built on three cornerstones: “choosing the best sustainable produce available in season, respecting and understanding the ingredients, and supporting preservation of the eco system.”

Sayad Restaurant is due to reopen on 15 September, and Shaun will bring a contemporary twist to the new menu, with mouth-watering, tempting creations such as Ocean Trout cured in salt and honey then confit’d in clarified butter, and Shaun’s personal favorites including Halibut with artichokes and Barramundi with asparagus-chevre risotto, orange, and fennel. Meat dishes such as Wagyu Sirloin and Lamb3 are also included alongside a Squab and Foie Gras dish with squab imported from the UK. There will be more to savor at Sayad for the new season.

Born in Canada, Shaun discovered his passion for cooking at an early age, inspired by his grandmother and the tempting home treats of Canadian Butter Tarts and Strawberry Rhubarb Pie. Excelling in his career across Europe and Asia, with credentials from the famous Gordan Ramsay’s Royal Hospital Road London Restaurant and Shaun’s recent nomination for Chef of the Year Award from Napa Wine Bar and Kitchen in Shanghai, he joins Sayad at Emirates Palace when his new menu will be complemented by a new-look Sayad Restaurant with the opening of the Sayad Lounge, an idyllic tranquil setting, the terrace overlooks the pristine beach and blue waters of the Marina, a perfect backdrop to take your time to indulge in Sayad.
