Master of Food & Wine is an event that takes place contemporaneously in 21 Park Hyatt hotels all over the world. In Milan, Italy, it comprises four dates that provide an introduction to four areas of Italian cuisine, guided by the chef at VUN restaurant, Andrea Aprea. The weekend events are available exclusively by prior booking, with a maximum of 20 participants.
The weekends all comprise an excursion on the Saturday, and an event in the Cupola of the Park Hyatt Milano:
19/20 January 2013: Wines and cured meats from the Oltrepò Pavese
23/24 March 2013: Olive oil, fish and wine from Lake Garda
15/16 June 2013: Valtellina culinary specialities
28/29 September 2013: Rice and risottoes
The first event, Wines and cured meats from the Oltrepò Pavese, 19/20 January 2013, begins with a visit to Il Mercato della Terra, Milan, where he will talk about the techniques involved in choosing raw materials. Guests will then be transferred to the hills of the Oltrepò Pavese district south of Milan, with a visit to the Montelio winecellar. Guests will have the chance of tasting local wines such as Riesling Renano, Bonarda and Pinot Nero, accompanied by the famous Varzi salami and other cured meats. Andrea Aprea will prepare lunch with help from the participants, in a menu that includes Ravioli Batalavar, with a filling of boiled beef and vegetables, and Cotechino with polenta. Guests will return to the hotel in the late afternoon.
On Sunday, there will be brunch in the Cupola of the hotel from 12.30 to 3.30 p.m., featuring products from the same area, including wines and cured meats. Hot recipes will be prepared by Andrea Aprea.
Guests can decide whether to take part in just the Saturday programme, or the complete two-day programme. Price is €120/person for just 19 January, or €160 for both days.
