The Hotel Carlton, one of Bilbao’s emblematic buildings, is located in Plaza Federico Moyúa, where the main commercial streets of the city’s turn-of-the-century expansion converge. Located in the palatial Carlton hotel, in the heart of Seville’s business and shopping districts, the Carlton serves traditional Basque dishes alongside some international classics. Basque cuisine is influenced both by the mountains and the sea, thus seafood and meat dishes features heavily. The food is also based on the culinary traditions of both France and Spain, as seen in the sirloin brochette, served with apple puree, cured ham and creamed spinach.
