Set 24 storeys above Shanghai's Bund , M1nt displays a sleek theatre kitchen inside an inviting Asian-styled dining room. Chef Dan Segall and his team can be seen preparing his ‘Free Asian’ cuisine in the show kitchen that combines woks and dim sum steamers side by side with high-end Italian appliances. The result is unique, delicate and tasty. Amongst the signature dishes, the vanilla-cured salmon, with the chef's Asian twist, kaffir lime. “Most commonly used in Indonesian cuisine, kaffir lime leaf naturally pairs with vanilla. Adding these two flavours to rich, salty salmon creates a perfect balance of citrus, spice and salt”, details Segall. The menu is describe as “work in progress” and is constantly evolving for the pleasure of our palates.
