This is no ordinary hotel restaurant. Two Michelin stars provide an indication of the brilliantly innovative cuisine created by chef Óscar Velasco, with roots in Spanish tradition but a wealth of originality and virtuoso skill. It oopened in 2001, with Santi Santamaría as adviser, but with Velasco ultimately in charge. The first Michelin star arrived in the first year, the second in 2005. Velasco is aiming for his third. The beautiful dining room was designed by Pascua Ortega, with a small number of widely-spaced tables, creating an intimate atmosphere. The 600+ wine list is a good match for the menu, with both Spanish and international labels.
