Same goes for bubbles: strictly champenois method, so no prosecco here. Food is never served alone and is paired to the wine, not vice versa. This nondescript hole in the wall with its shabby-chic décor and wafting scent of fresh prosciutto has become a local institution. The little brother to restaurant Santo Bevitore next door brings patrons up close and personal with the guys behind the bar who are only too eager to share a passion for their wines, many of which come from smaller, lesser-known producers.

One of the biggest names in Tuscan wine offers a warm, understated locale tucked inside the courtyard of the eponymous family’s grand palazzo, where you can admire an enormous old-school Italian wine cart full of straw-covered bottles.
